Plug the KitchenAid stand mixer into a 120-volt, three-prong outlet before use. Refrain from using an extension cord. Do not place the mixer in water or near liquids. Keep the mixer away from children or provide close supervision when a child operates it. Unplug the mixer after each use and anytime you clean it or remove parts. The mixer may feel hot when you are mixing heavy items for a long time; this heat is normal. The mixer may also have a strong odor, especially when new, and this is also normal. If the flat beater hits the bowl bottom or appears too far away from the bowl, it needs adjusting. This adjustment requires turning a screw underneath the mixer head counterclockwise to raise the beater or clockwise to lower it until the beater just clears the bowl's surface.
If the mixer fails to operate, check its plug. Plug it securely into the outlet. Also, check the circuit breaker or fuse in your home's electrical box. Replace if necessary. Try turning the mixer off for 10 to 15 seconds and then turning it back on. If it still doesn't work, leave it for 30 minutes before turning it on. Attach the flat beater for normal to heavy mixtures including cakes, frosting, candies, cookies, pie pastry, biscuits, quick breads, meat loaf and mashed potatoes. Attach the wire whip to incorporate air for eggs, heavy cream, boiled frosting, mayonnaise and lighter cakes such as sponge and angel food. When mixing and kneading yeast doughs attach the dough hook to make breads, rolls, buns and coffee cakes.
Mixing time is reduced when using your KitchenAid stand mixer. Mix a cake in half the time it calls for in the recipe. Watch the batter with other recipes to determine the mixing time. Turn off the mixer as soon as it reaches the desired consistency, as detailed in your recipe.
Add ingredients on the bowl's side. Add solid ingredients such as nuts, raisins or dried fruit during the last few seconds of mixing. If a mixture contains a large amount of liquid, start mixing it at a lower speed until it has thickened.
Choose the "Stir" speed for slow stirring, mashing, adding flour or dry ingredients to batter or adding liquid to dry ingredients. Select "2" for mashing potatoes or vegetables, cutting shortening into flour or mixing and kneading bread dough. If making cookies or combining sugar with shortening or egg whites, select "4." To cream or whip mixtures or for high speed cake mixing, choose "6." Select "8" to whip cream, egg whites or boiled frostings. For the fastest whipping, primarily for small amounts of cream or egg whites, select "10."
