How to Make Iced Tea With a Pinch of Baking Soda

On a hot day, there are few beverages as refreshing as a tall glass of ice-cold black tea. Black tea often tastes bitter because of its tannic acid content, but just a pinch of baking soda neutralizes the acid and removes the bitterness. The amount of baking soda used isn't enough to change the taste.

A pinch of baking soda removes bitterness and darkens iced tea.

Add baking soda to mask bitterness even if you plan to sweeten the tea with sugar.

  1. Bring water to a boil in a saucepan and stir in a pinch of baking soda. When the baking soda dissolves, submerge a few tea bags in the boiling water and remove the pan from the heat immediately.

  2. Steep the tea for several minutes until the water turns dark brown. Remove the tea bags and discard them.

  3. Stir in sugar or artificial sweetener to taste, if desired. A glass pitcher can crack when it comes into contact with boiling hot liquid, so mix cold water or ice in the tea while it's still in the saucepan to chill it, before pouring it into a pitcher. After the tea cools for a bit, pour it into the pitcher and add more ice and cold water as needed.

    Even if you've been making iced tea the same way for a long time, you may wish to experiment by using more or fewer tea bags, different types of black tea and natural sweeteners, such as honey and maple syrup, to enhance your iced-tea drinking experience.
